Hail Damage on Grapevines

Hail is one of the most brutal events in viticulture because it makes no concessions. Frost can often be forecast. Drought can be managed. Disease pressure can be fought with canopy work, sprays, airflow, and discipline. Hail arrives like a drunk with a hammer. In five minutes, it can take a year of work and turn it into firewood, compost, or a very expensive lesson in crop insurance.

But not all hail damage is the same. A hailstorm in March is not the same as a hailstorm in June. A shredded leaf is not the same as a split berry. A bruised flower is not the same as a damaged dormant eye. The timing of the hail matters as much as the storm's violence. In viticulture, stage is everything.

To understand hail damage properly, we need to follow the vine through the season: dormant eye, budbreak, young shoot, flower, fruit set, leaves, berries, ripening, and finally the wine. Because the vine may survive, the vineyard may recover, and the winery may still make something drinkable. But the quality, yield, timing, and economics can change dramatically.



The Dormant Eye: Damage Before the Vine Even Wakes Up

Worth saying up front, true dormant eye hail is the rare case. Hail is mostly a spring and summer event, so most early damage lands on swelling or pushing buds rather than a fully sleeping eye. But it happens, and when it does, you need to understand what is sitting inside that bud.

Before the bud opens, the grapevine carries next season’s potential inside what growers often call the “eye.” Technically, this is a compound bud. It contains a primary bud, a secondary bud, and a tertiary bud. Think of it as the vine’s insurance policy. The primary bud is the main event. It usually carries the highest crop potential. The secondary bud is the backup. It may produce fruit, but usually less. The tertiary bud is survival mode, not luxury production.

If hail damages the eye before budburst, the consequences depend on how deep the damage goes. If the outer bud scales are bruised but the internal primary bud survives, the vine may still push normally. If the primary bud is destroyed, the vine may push a secondary shoot. If both primary and secondary are damaged, the vine may only push a weak tertiary shoot or nothing useful at all.

This is the first major point: early damage can be invisible until the vineyard wakes up. A grower may look at the vines and see little obvious destruction, but inside the bud, the crop has already been reduced. When spring comes, certain nodes simply fail to push, or they push weakly, or they produce shoots with fewer clusters.

From a wine point of view, this type of damage is mostly a yield problem, not automatically a quality problem. If the vineyard loses a percentage of fruitful buds early enough, the remaining crop may still ripen beautifully. Lower yield can sometimes improve concentration if the vine remains balanced. But that is not a strategy. That is making soup from a broken plate.

If too many eyes are damaged, the vineyard loses not only crop but also uniformity. Some vines push normally, some push late, some rely on secondary buds, and some struggle. Uniformity is one of the quiet foundations of great wine. Hail loves to destroy it.



Budbreak: When New Growth Is Most Fragile

Once buds begin to swell and green tissue appears, the vine becomes extremely vulnerable. Young shoots are tender, full of water, and mechanically weak. Hail at this stage can snap shoots, destroy emerging leaves, and knock off the tiny inflorescences that would become grape clusters.

If the shoot is completely broken, the vine may respond by pushing secondary or latent buds from older wood. This is recovery, but it is not a miracle. Secondary shoots are usually less fruitful than primary shoots, and they often develop later. That means reduced yield and delayed ripening.

Here the grower has to make a practical decision. Is there enough season left for secondary growth to produce a viable crop? In a warm region, maybe. In a marginal climate, probably not. Chardonnay in a cool year after early hail? Good luck. Cabernet Sauvignon in a warm site with a long autumn? Maybe you still have a fighting chance.

This stage creates what I call “calendar damage.” The vine may replace some growth, but it cannot replace time. A new shoot that pushes out by two or three weeks does not magically ripen on the original schedule. The fruit, if any, will lag behind. Harvest becomes complicated. Sugar, acidity, phenolic maturity, and flavor development all become less predictable.

For wine quality, early budbreak damage can still be manageable if the damaged material is cleaned up and the remaining crop is even. The wine may still be fine, even excellent, but the tonnage will be lower. In premium wine, lower yield is not always a tragedy. In commercial farming, it is a financial punch to the face.



Shoot Damage Before Flowering

Between budbreak and flowering, the vine is building its canopy and preparing its reproductive system. The shoots elongate, leaves expand, and inflorescences develop. Hail during this period can strip leaves, bruise shoots, break shoot tips, and damage the future flower clusters.

When the shoot tip is broken, the vine often responds by pushing lateral shoots. This can help rebuild leaf area, but it can also create a mess. Lateral growth can shade the fruit zone, crowd the canopy, and reduce airflow. If unmanaged, the vineyard goes from clean architecture to green chaos.

This matters because the leaves are the engine. They produce the sugars needed for growth, ripening, and reserve storage. Destroy too much leaf area and the vine is forced to rebuild before it can ripen. The fruit may remain behind schedule. The vine may also sacrifice future potential because the buds forming for next year depend on good light and nutrition during the current season.

This is where hail damage becomes a two-vintage problem. You may lose crop this year, but you may also reduce bud fruitfulness for next year if the canopy is badly damaged or shaded during the period when next year’s buds are being formed.

Again, the wine impact depends on what remains. If hail removes part of the crop but the canopy recovers cleanly, the wine can still be good. If hail creates uneven growth, delayed secondary shoots, shaded fruit, and disease pressure, quality starts to slide.



Flowering: The Worst Time to Get Hit

Hail during flowering is one of the most damaging scenarios because flowers are delicate and irreplaceable. Before fruit exists, there must be successful flowering and fruit set. If hail knocks off the flowers, bruises the inflorescences, or damages the shoot supporting them, the crop is gone. There is no berry to heal. There is no cluster to sort. It simply never forms.

Flowering damage shows up in two ways, and they are not the same thing. The first is coulure, the shatter. Flowers and tiny young berries fail and drop, and the cluster ends up sparse and stripped. That is straight crop loss. The second is millerandage, hens and chicks, where the bunch sets unevenly, and you get normal berries sitting next to small seedless ones in the same cluster. Cold, wet, or windy bloom can drive both on their own. Hail just adds blunt physical destruction on top of the weather.

This type of damage is severe because it attacks yield directly. A damaged flower does not become a grape. The vineyard can push laterals, and some varieties may produce a small second crop, but this second crop is usually later, uneven, and often not useful for quality wine.

From the winery perspective, flowering damage can be clean damage if the remaining fruit is healthy and evenly ripened. The wine may not show “hail character.” What it shows is lower production. Fewer bottles. Higher cost per bottle. The pain is in the grower’s pocket more than in the glass.

But if flowering damage creates uneven bunch development, the winemaker may face fruit with inconsistent maturity. Some berries ripen properly, others lag behind. That can lead to green flavors, sharper acids, lower sugar, and rougher phenolics, especially in red wines.



Fruit Set and Young Berries

After fruit set, the berries are small, firm, and green. Hail at this stage can knock berries off, bruise them, scar them, or damage the stems and rachis holding the cluster together. Some injured berries may dry up and fall away. Others may keep growing with scars.

Early berry damage is not always fatal to wine quality if the weather turns dry and the vineyard is managed well. Green berries have some capacity to scar over. A small wound early in development may become a cosmetic scar rather than a rot factory. That said, every wound is an open door. If humidity, rain, and disease pressure follow, the problem escalates quickly.

Leaf loss at this stage is also critical. Around fruit set, major defoliation can reduce berry number and affect berry growth. If the vine loses too much leaf area, it loses photosynthetic capacity. That means less sugar production, weaker ripening, slower development, and potentially lower flavor intensity.

For the final wine, the key is balance. If the crop is reduced and the canopy is still functional, quality may survive. If the crop remains too large for a damaged canopy, the vine struggles, and the wine can finish thin, green, or simply unfinished.



Leaf Damage: The Engine Gets Shredded

Many people focus on the grapes, but leaf damage can be just as important. Leaves are solar panels. They feed the vine, ripen the fruit, and help build reserves for the following season. Hail can shred leaves into ribbons, strip them completely, or leave the canopy looking like someone ran it through a wood chipper.

The effect depends on how much leaf area is lost and when it happens.

Early in the season, the vine may regrow. That costs energy, but recovery is possible. Around flowering and fruit set, heavy leaf loss is more dangerous because the vine needs energy for fruit set, berry development, and shoot growth. Later in the season, after veraison, leaf loss can slow sugar accumulation and phenolic maturity. The fruit may be hanging, but the engine has lost horsepower.

There is also the issue of sunburn. If hail strips leaves from the fruit zone suddenly, berries that developed in shade may be exposed to direct sun. This can cause sunburn, dehydration, bitterness, and cooked flavors. That is especially dangerous in warm regions or during heat waves.

But let’s be precise: not every torn leaf ruins a vintage. A light hail event that removes some leaves and reduces crop modestly can be absorbed by a healthy vine. The danger is severe defoliation combined with crop load, disease pressure, and insufficient time for recovery. Viticulture is not drama. It is balance.



Fruit Damage After Veraison: Now We Have a Wine Problem

Once berries soften and sugar begins to accumulate, hail damage becomes far more dangerous for wine quality. A green berry can sometimes scar. A ripe berry splits, leaks, ferments, oxidizes, and rots.

This is where the vineyard problem becomes a winery problem.

Damaged skins expose sugar-rich juice to oxygen, yeast, bacteria, fruit flies, and fungi. Botrytis, sour rot, acetic acid bacteria, oxidative yeasts, and other spoilage organisms can move quickly. The fruit can begin fermenting in the vineyard. Volatile acidity can rise. Ethyl acetate can appear. Aromas can shift from fresh fruit to vinegar, nail polish remover, bruised apple, mold, and rot. Not exactly the tasting note anyone wants to put on the back label.

In white wines, damaged fruit can lead to oxidation, dull aromatics, browning, bitterness, and microbial instability. In red wines, the problems include volatile acidity, harsh extraction from compromised skins, muddy fruit, rot characters, and color instability. Botrytis also brings laccase, an oxidative enzyme that survives crushing and keeps browning the wine long after the fruit is in the cellar. It is one of the harder spoilage problems to clean up after the fact, because it does its damage in the must and the tank, not just on the vine.

Late-season hail requires brutal sorting. There is no romance here. Rotten fruit must go. Split berries must go. Moldy clusters must go. The sorting table becomes the line between a salvageable wine and a microbial dumpster fire.

A winemaker may choose to harvest immediately if the fruit is close enough to maturity. If not, the choice becomes ugly: wait and risk rot, or pick early and accept lower ripeness. Either way, the storm has taken control of the vintage.



Damage to Canes, Cordons, and Trunks

Hail can also wound the permanent structure of the vine: canes, spurs, cordons, and trunks. This damage is easy to underestimate. A bruised berry affects this year. A wounded trunk can affect many years.

Open wounds can interfere with sap flow and create entry points for trunk diseases. Eutypa and Botryosphaeria do not care how the wound was made. Young vines are especially vulnerable because the shoot selected to become the future trunk may be scarred or weakened. In severe cases, the grower may need to cut back and retrain the vine.

This is the slow consequence of hail. The crop loss is immediate and visible. The structural damage may show up later as weak growth, poor pruning wood, broken canes, or long-term decline.



The First 48 Hours: What a Grower Actually Does

Knowing what hail does is one thing. Standing in a shredded block the morning after is another. The first decisions you make set the ceiling on what the rest of the season can be, and most of them are about controlling the things hail leaves behind: open wounds, dead tissue, and a clock that has already started running.

First, do not rush to judgment in the rain. Wet, beaten-down canopy always looks worse than it is. Wait for the vineyard to dry and stand back up, then walk it and assess honestly. How many shoots are broken, how much fruit is on the ground, how much green tissue is still functional. The number you are really looking for is how much working leaf area survived, because that is what has to carry whatever crop is left.

Second, protect the wounds. Every torn shoot, split berry, and stripped leaf is an open door for fungi and bacteria, and the clock on rot starts the moment the storm passes. Where permitted and appropriate for the stage, copper has often been used for its drying and antibacterial action on torn tissue, sometimes alongside a broader fungicide depending on disease pressure and the grower’s program. The goal is not to save what is already destroyed. It is to keep the destruction from becoming an infection that spreads into healthy fruit.

Third, clean up and let the vine rebuild. Shattered shoots and dead material in the fruit zone hold moisture and feed rot, so getting airflow back through the canopy matters more than it looks. If the vine is going to push laterals to rebuild leaf area, give it room to do that cleanly rather than into a tangle of broken wood.

Fourth, make the crop decision with your eyes open. If growth is going to be uneven, with primary and secondary shoots ripening on different schedules, you may be better off thinning to the fruit that can actually finish rather than trying to ripen everything and finishing none of it well. And late in the season, the math gets blunt: with weather coming and damaged skins, picking early at lower ripeness often beats hanging fruit into a forecast you cannot control. None of these are good options. They are just the least bad one available on the day.



The Risk Curve: When Hail Hurts Most

Not every hailstorm carries the same consequence. The practical risk curve depends on two things: what tissue is hit and how much season is left for the vine to recover. Early hail usually punishes yield and uniformity. Late hail punishes wine quality directly.

How Hail Affects the Final Wine

Hail affects wine in three main ways: quantity, maturity, and cleanliness.

First, quantity. If hail destroys eyes, buds, shoots, flowers, or berries, there is simply less fruit. That part is obvious. No bud, no shoot. No flower, no berry. No berry, no wine. Very complicated stuff. NASA is still reviewing it.

Second, maturity. If hail forces the vine to push secondary shoots, rebuild leaves, or ripen fruit with a damaged canopy, the fruit may mature late or unevenly. This affects sugar, acidity, aroma, tannin, color, and flavor. The wine may taste thinner, greener, sharper, or less complete.

Third, cleanliness. This is the big one late in the season. Damaged fruit can bring rot, oxidation, volatile acidity, and microbial problems into the winery. If that fruit is not sorted aggressively, the final wine can carry the signature of the hailstorm in the worst possible way.

The strange truth is that hail does not always ruin wine quality. Sometimes it only reduces yield. A vineyard hit early, then managed properly, can still produce excellent wine from the surviving fruit. But when hail hits ripe fruit, especially before wet weather, it becomes one of the most dangerous quality threats in viticulture.



The Real Lesson

Hail damage is not one thing. It is a timeline of possible disasters.

Before budbreak, it damages potential. At budbreak, it destroys the first growth. Before flowering, it breaks the architecture of the canopy. At flowering, it eliminates the crop before it exists. At fruit set, it reduces berry number and weakens the vine’s balance. After veraison, it attacks the quality of the wine directly. At harvest, it can turn beautiful fruit into a sorting nightmare overnight.

The vine is resilient, but resilience is not magic. A grapevine can push secondary buds, grow laterals, heal small wounds, and rebuild leaf area. But every recovery has a cost: lower yield, later ripening, uneven maturity, disease risk, or reduced potential for the following year.

For the grower, hail is an economic disaster. For the winemaker, it is a sorting and microbial problem. For the drinker, if the work was done properly, it may simply mean fewer bottles and higher prices. If the work was not done properly, the glass will tell the truth.



Final Sip

Hail does not respect your business plan, your spray schedule, or the vintage you had pictured in your head. It edits the vineyard on its own terms, and the only vote you get is what you do in the days that follow. Read the stage, protect the wounds, sort without sentiment, and accept that the storm has already rewritten part of the story. Wine is agriculture before it is poetry. Hail is one of the reminders, and it does not stop to explain itself.
